Matcha Mini Muffins (24 Minis, 12 Regs)

Ingredients
  • 1 2/3 cups of all-purpose flour (whole wheat flower works too)
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1 tablespoon of PANATEA Ceremonial or Culinary matcha
  • 1/2 cup of white sugar (stevia works too)
  • 1 egg
  • 1/3 cup of melted butter
  • 1 cup of milk
Directions
  1. Preheat oven to 350°F
  2. Grease a muffin pan or line it with paper muffin liners
  3. Whisk together in a mixing bowl: flour, salt, baking powder, matcha and sugar
  4. Separately, whisk together in another mixing bowl: egg, melted butter and milk
  5. Stir milk mixture into flour mixture until moistened
  6. Divide batter into muffin pan or muffin liners
  7. Bake until golden - tops should spring back when pressed lightly (about 12 minutes for minis and 24 minutes for regs)
  8. Let cool and enjoy your #matchabite
